Deviled Eggs

I like to make Deviled Eggs. And I made them for out big White St. Easter get together. So I thought I would post this one for you. I don’t really have a recipe I just do it to taste.

Boil your eggs and then peel them. IMG_4137

Then you slice them in half and put the yolk in a bowl. IMG_4139

Then you add salt and pepper to the yolks and Hellmann's Real mayo that is what I use. I first mash them with my potato masher and then whip them with my hand mixer.

I use my decorating bag with a nice tip and put the mixture in that and then put it in to the center of the eggs. You can also do it with a spoon. Then top with a sprinkle of paprika. You are Done!

Chocolate cupcakes with Peanut Butter Frosting.

Travis has been asking me to make Chocolate cake with Peanut Butter Frosting. I decided to make mini cupcakes b/c we don’t eat a lot of cake in our house. So here are a few pictures and the recipes I used.

I can tell you that I LOVED the Chocolate Cake recipe I used but I don’t care for the Peanut Butter frosting recipe. It was to greasy for my taste. Also the cake recipe was for 2 round cakes, so when I made the mini cupcakes I baked them for 15mins and the came out GREAT!!

Dinner 3/30

I don’t have pictures of this dinner but it is one I like to make. It is quick and easy and tastes great. It is called Zesty Minestrone Soup and you make it in your crock pot. I like to make this on rainy icky days and on days I don’t want to stand in the kitchen and cook. I follow the recipe except I suggest cutting the amount of noodles you use. It always seems like SO MUCH when I do it. And I like to add more tomato. But that is me. Here is the recipe.

Dog Treats

Frank has been getting sick from some treats I get at the store lately so I decided to make a BIG batch of cookies that he likes.


I scoop the mixture with my little cookie scoop and then put it in the cornmeal/cinnamon mixture. Mix it up and place them on the cookie sheet.

Once I get them all on the cookie sheet I mush them. Either with a fork or this time I used a cup.

Bake for 10mins and then they are done. I want to say this made about 80 cookies and I break them in half and some times thirds for him.

Snickerpoodles
1/2 cup vegetable oil
1/2 cup shortening
1 cup honey
2 eggs
3-3/4 cups white flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 cup cornmeal
2 teaspoons cinnamon


Mix vegetable oil, shortening, honey with eggs. Beat well. Add flour, soda and cream of tartar. Knead dough until mixed well.

Shape dough by rounded teaspoons into balls. Mix the cornmeal and cinnamon together in a bowl and roll balls in mixture.

Place 2 inches apart on a greased cookie sheet. Press the balls down with a fork.

Bake for 8-10 minutes at 400F. Cool on a rack. Store in airtight container.

Dinner 3/27

Tonight I made something I have never made before. I have had something like it before but this was from my dieter's cookbook. It was okay. Reminded me of the Mexican Doughboys and Travis said he would rather have those then this.

You make homemade corn bread and while you do that you also brown hamburger or ground turkey and then add frozen corn and salsa. You put half of the corn bread mixture on the bottom of the 9x9 dish and then put the meat mixture over that then the rest of the corn bread on top. Bake for I think 25mins then top it with shredded cheese and put back in the oven till melted.


I (like always) topped it with sour cream!!

Dinner 3/25

Sorry I have fallen behind in my dinner posts. Plus I haven't been cooking a lot of new stuff lately. No worries I have some new recipes I am looking at trying. SO this evening I made shish kabob. I make them with Filet Mignon. That is pretty much the ONLY steak we eat in this house.


I cut up the steak and marinade it in a teriyaki marinade for 20 to 30 mins. You can do longer if you want. Then I cut up Red Onion, Red Pepper and I also use chunked pineapple and cherry tomatoes.

I cover the grill in tin foil and then grill for about 20mins or so, turning every 5 to 10 mins.

I served this dinner with brown rice and garlic rolls. And I like sour cream with EVERYTIHNG!!

Artichoke Dip

I have been asked to post this recipe so here you go:

Artichoke dip
1 can Artichoke (diced up)
1 can chilies
1 cup real mayo
1 cup Parmesan cheese

Turn oven on to 350. Dice up the Artichoke and mix all items together. Put in a 9x9 casserole dish. Cover and bake for 25 mins.

Remove cover and sprinkle with some Parmesan cheese. Then bake for an additional 5mins our until cheese looks melted.

 
I got this recipe from a great friend back in Duluth and I LOVE IT!!!! I serve it with either bread, chips or just eat it by itself.
